#ewew cooks Potato & Egg Salad with Bacon

I love to eat salads and more so when potatoes and eggs are involved....ok, ok, it's not quite a salad since there aren't any greens but technically it's still called a salad.....so, it's a salad.
 
It's easy to whip up and I like to eat it as a replacement meal when I'm not in the mood to cook something more elaborate.  It's a good replacement for rice since I need my carbs!
 
Other than your store-bought mayonnaise, you need just two ingredients...potatoes and eggs but, if you want to take it up a notch, you can add a third ingredient....bacon! :D  So, for one serving as a main meal, your three ingredients are....two potatoes, two eggs and two rashers of bacon (pretty easy to remember).
 
And then you just need three steps to make this Potato & Egg Salad with Bacon.
 
Step 1 - Dice the potatoes into cubes and boil gently in salted boiling water (for about 10 minutes) until fork-tender.
 
Step 2 - Boil the eggs in a gentle simmer for about 10 minutes until, well, it becomes hard-boiled eggs.
 
Step 3 - Dice and sauté the bacon in a non-stick pan over low heat until crispy.
 
Drain the soften potatoes, peel and roughly chop up the hard-boiled eggs and dish up the bacon bits.  Your ingredients are ready to be assembled.
 
Season your potatoes with salt and freshly cracked black pepper and toss with a good mayo of your choice.  I  actually use very little mayo, just enough to coat the potato cubes lightly, as I find it cloying if there's too much mayo.  For those who dislike mayo, you can always add a bit of tomato sauce to turn it into something like a Thousand Island sauce.
 
I also like to mix the mayo with the chopped egg separately (don't forget to season as well).  This way, the egg yolks won't get mushed from too much tossing around.
 
Finally, combine everything together but safe some of the bacon crisps for sprinkling on top (for better presentation).
 
And here's my version of Potato & Egg Salad with Bacon which I absolutely love! :)  If you happen to have some fresh herbs like chives or dill, you can sprinkle some on top.  It's especially good with a sprinkling of chopped chives for some freshness and colour.
 
If you want a healthier version, you can always replace the mayo with yoghurt or sour cream or a combination of both.  Or, if you prefer some fibre in your diet, add diced apples into the mix....it adds a nice crunch to your salad.
 
The soft and fluffy potatoes, coupled with the creamy egg yolk and crunch of the bacon crisps, make this a very good tasting salad indeed, one that I don't mind having over and over again.  In fact, I eat it quite regularly and this portion is just nice as a main meal for one.
 
It's also excellent as an appetiser or a side dish to your main meal and this portion is sufficient for 2 - 3 persons.  So, for those who can't live without their carbs, here's one dish you can indulge in.....since it's called a salad, after all! ;p  At least, this salad won't make me hungry in the next hour or two.

  2. I love your potato, egg and bacon salad! Makes for a very delish and filing main meal. Which reminds me I haven't made a potato salad in a very long time!

    2. You have never eaten potatoes with bread? I mean those curry chicken paos or curry chicken buns will surely have potatoes in them and paos are almost like bread.

    4. If you're talking about curry chicken paos...oh yeah, there are potatoes in them and I've definitely eaten those before. I was imagining the potato salad "kiap" in between two layers of (say) Gardenia bread...that I've not had before.

    5. If you are not afraid of too much carb, try it, it is tasty, just use one slice of bread, put some potato salad on it and fold in half and nom nom nom! :D

  4. the 12-year-old me would have loved this ... i still remember back in standard six, i listed my three favourite foods, and it was: 1. maggi mee, 2. eggs, 3. potatoes, heheh :D this looks like a lovely salad ... hmmm, what to add for a bit more fibre ... some cauliflower? :D

    1. I'm glad this dish brings back memories of your childhood favourites :) If you want a bit more fibre....I'd suggest you add diced apples.....not cauliflower! :D I had it like that before. Hmm, thanks for reminding me, I'll add this to the post.

    Creamy egg yolk? Hard boiled egg can get creamy egg yolk? How??

    1. You seem to have digested every word of my post. Of course you can get creamy egg yolks from hard-boiled eggs....don't overcook until the egg yolk becomes hard! And then egg yolk + mayo = creamy egg yolk! ;D At least my version was.

    2. My version of hard boiled egg is when the egg yolk is hard. I used to reject hard boiled eggs cooked by my mom if the yolk is still soft.
