#ewew cooks Fried Ikan Bilis with Onions

This simple and long standing favourite dish of mine and my family's....Fried Ikan Bilis with Onions is easy to prepare, fast to cook and good to eat (my cooking principle).  It will definitely earn you 'brownie' points with your kids.
 
 

Ingredients:
 
80g ikan bilis (dried anchovies)
2 medium red onions
1 clove garlic
1/2 tbsp soya sauce
2 tsp sugar (or more if you like it sweeter)

Preparation:

Rinse and wash the dried ikan bilis.
Peel and slice the onions.
Peel and mince the garlic.

Method:

Deep fry your ikan bilis in oil or use the microwave oven method (refer to my earlier post on microwavable fried ikan bilis) and set aside.

In a non-stick pan on medium heat, drizzle in some oil and fry the sliced onions. 

Once the onions have softened and caramelised, add some chopped garlic and fry till fragrant.

Next, throw in the fried ikan bilis. 

Add your seasonings of soya sauce and sugar.  Stir until the sugar dissolves completely to get a sticky, caramelised and darkened texture.  All in all, it should take not more than 2 mins from start to finish. 

Dish up and serve.  This is the simplest version.  There are other versions which include diced green bell peppers or green chillies while some include "chee yau char" (fried pork lard bits)...it's up to you.

Serves 1 - 2 and best eaten with rice or porridge.
