I'll try to explain it in the best way I can. Freshly fried shallots are just nicely crisp (you can even detect those cut by hand, uneven slices) and they tend to be in rings (much like onions when they're fried, they get detached) while pre-bought shallots are overly crunchy and most of it tend to stick together without any holes (rings) in them (that's why they're generally thicker). Does that make any sense? Of course, the most obvious reason to tell them apart is in the taste. Freshly fried shallots just have that fresh taste of onions in them and don't taste stale like many pre-bought shallots (some even smell and taste rancid).
